Sweet potato brownies all year round! These taste so good and are packed with valuable nutritions!
Also, they are totally multifunctional. You can have them for breakfast, snack or dessert. Or even dinner! I like to make them when I travel – they make perfect travel snacks which are very satisfying and practical since they are both a meal and a dessert.:)
Let’s go make them!
What do I need?
2 medium size sweet potatoes, steamed or cooked
6-8 medjool dates
1 TBSP softened coconut oil
2 TBSP tahini or nut butter
5-6 TBSP cacao powder
pinch of sea salt and baking powder
pinch of vanilla, cinnamon and chili – optional
2 cm fresh ginger
1 cup strong coffee – optional
1 cup buckwheat flour or oat flour (oat flour – you can make your own by simply blending oats into a flour) or other flour of your choice
For the chocolate coating:
20 g of very dark chocolate – 2 big squares
1 tsp of coconut oil
What do I do?
Start with soaking the dates in the strong coffee for at least 15 minutes. Steam the sweet potatoes, then blend them together with ginger, soaked dates, tahini or nut butter and coconut oil. Add also the coffee you were using for soaking the dates. Mix this together with flour, baking powder, vanilla, cinnamon and cacao. Add maple sirup or honey if you want even sweeter version. Add the chopped walnuts or other nuts of your choice. Spread the dough on a baking form of your choice with a sheet of baking paper on the bottom. Bake on 190 degrees for about 30-40 minutes. Let it cool down. To prepare the chocolate coating melt 40 g of very dark chocolate together with 1 tsp of coconut oil. Spread over the brownies. Sprinkle with sea salt and some chili flakes if you want even more spicy version.
I like these brownies best the next day, after they had rested well in the fridge but they are very delicious freshly baked too! You don’t even need to bake if you want to go for a different experience:) Simply place the dough into a form of your choice and place into the freezer until it s firm. Then cover with chocolate frosting. What you end up with are chewy and totally indulgent brownies!
