Raw cookies with Christmas spices and dark chocolate

No time for baking cookies? Skip the baking and make raw cookies!

If you liked to eat cookie dough as a child and could not understand why it had to go to the oven when it already tasted so good, you are going to like this recipe! This is one of the great things about being adult. You are in charge.

These cookies are packed with all what is Christmas. Nuts, dates, coconut, cinnamon, cloves, ginger and raw chocolate. Smelling heaven. Tasting great. Plus, they are super easy to make and good for you.

I made the dough and the chocolate ready in the kitchen and did the rolling and dipping part in a different room. I lit the candles, played nice music and really enjoyed the process. It is also nice to involve family or friends, gather around the table and roll the cookies together. The whole place turns into a cosy chocolate land! Do you want to try? Here is how.

What do I need?

1 cup oats
1 cup shredded coconut
8 dates
2 Tbsp softened coconut oil
4 Tbs water
pinch of salt and vanilla
half tsp cinnamon
half tsp black pepper
half tsp ginger
pinch of grounded cloves – optional

For the raw chocolate:
1 Tbsp softened coconut oil
6 tsp cacao powder
2 tsp honey

What do I do?

Place all the ingredients in the food processor to make a dough. Let the dough rest in the fridge while you are making the chocolate. Melt the coconut oil and honey carefully in the bain maire. Then add the cacao powder. Mix together with a tea spoon to reach the right consistence. Take the dough out of the fridge and form small balls or any other shapes you like, then dip parts of these in the raw chocolate and set on a plate. Place in the fridge for a while until the chocolate becomes solid. Enjoy this delicious treat any time!
